Broken Rice

Broken rice are nothing but fragments of whole rice grains. These may have broken in the field, or during drying, or during transport, or during milling. 

Mechanical separators are used to separate the broken grains from the whole grains and then are sorted by size. 

Yes, there is no change in the flavor of broken rice when compared to the whole grain rice of the same variety. One should understand that broken rice is fragmented, not defective; so there is nothing wrong with it or its flavor.

Ideally sushi rice has a different texture than white rice. It is stickier and its grain is short in size when compared to white rice which has a medium to long grain size. Sushi rice also contains more starch than white rice. Having said that because broken rice have shorter grains when cooked with the right amount of water it can mimic the texture of sushi rice. However the taste will be different from sushi rice which has a distinctive flavor.

Apart from consuming broken rice in our daily meals, brewers make beer using them. It is also used in feeding livestock and aquaculture. Additionally, broken rice is used for the processing of starch used in the laundry or in clothes, cosmetics, and textiles.
